In celebration of Cinco de Mayo (and my birthday:) I thought I’d share some recipes that I can’t wait to try for a festive fiesta dinner party!

And since swimsuit season is just around the corner, these fresh vegetable tacos will fulfill your Mexican craving with less guilt!  I can’t wait to try this one when I get back to Dallas.
